what you need
- 1 box vanilla wafers, crushed
- 2 cups sugar
- 2 sticks real butter, softened
- 6 eggs
- 1/2 cup whole milk
- 1 cup chopped nuts (I prefer pecans)
- 1 cup coconut (optional)
make it
Place vanilla wafers in a Ziploc bag and crush as fine as possible. (I use a plastic rolling pin.) Mix sugar and butter together until fluffy. Add eggs, 1 at a time and beat thoroughly each time. Mix in crushed wafers, and then add milk. Mix in chopped nuts.
Pour into lightly floured and greased Bundt pan. (I use a can of the flour & oil mixed.)
Bake for 2 1/2 hours at 320 degrees F or until toothpick comes out clean.
Notes
This cake is very moist and rich and will last a long time if kept in the fridge. It can be frozen for use at a later time. It makes a great brunch item or a welcome to the neighborhood gift.
