what you need
- Bite-sized red potatoes, washed and scrubbed, with the skins left on
- 1 medium onion, sliced in rings
- 1 green bell pepper, sliced into strips
- 1 red bell pepper, sliced into strips
- Yellow squash, cut into medium slices
- 1 large ripe tomato, sliced
- Any other fresh vegetable your family enjoys
- Salt
- 1 lemon

Par-boil the bite sized potatoes in a pan of water, just until crisp-tender.
Cut off a section of aluminum foil large enough to hold one serving in a packet. Start with the onion slices on the bottom. Add the potatoes on top of them, then the bell peppers, then the squash, and finally, the tomato slices on top. Sprinkle the top with a little salt and fresh squeezed lemon juice. (If you like the lemony flavor, use extra lemon and a dash of lemon pepper seasoning.) Twist the top of the aluminum foil, and then fold up the sides so that it forms a packet.
Place on the grill for 15-20 minutes while you cook your meat. Do not open the packet until time to eat.

This recipe is great because it can be adjusted to fit your family's tastes. I've made packets with just about every vegetable imaginable!
