Mouth-Watery Mango Cheesecake (no oven needed)

what you need
- 8 cups mango cubes, divided
- 1/2 cup lemon juice
- 5 Tbsp. sugar
- 2 pkg. (8 oz. each) Philadelphia Cream Cheese
- 5 Tbsp. sweeten condensed milk
- 2 tsp. gelatin powder
- 1/3 cup boiling water
- 2 pkg. ready-to-serve graham pie crust
make it
Blend 5 cups mango, lemon juice and sugar in a food processor, blend until smooth. Beat cream cheese, the mango mixture, and condensed milk with electric mixer on medium speed until well blended.
Mix the gelatin powder and boiling water together in a separate cup, stir until gelatin completely dissolved. Pour gelatin mixture slowly into the cream cheese mixture while the electric mixture on low speed.
Pour the remaining mango on crusts, spread evenly. Pour cream cheese mixture into crusts. Chill for about 3 hours or until it gets firm, ready to serve.
Notes
For better flavor, choose Philippine mangos, will have better flavor and aroma.
Make sure the gelatin is completely dissolved before add into cream cheese, otherwise some hard particles will remain inside the cake.
