what you need
- 1 pkg. (3 oz.) cream cheese, softened
- 5 large eggs, divided
- 1/4 cup milk
- 1/2 tsp. cracked pepper
- 1/8 tsp. salt
- 2 Tbsp. chopped green onion
- 1 Tbsp. butter, or margarine
- 1/2 cup (2 oz.) shredded Monterey Jack cheese
- 3 slices bacon, cooked and coarsely crumbled

Beat cream cheese at medium speed until smooth. Add 2 eggs; beat until smooth. Add remaining 3 eggs, milk, pepper, and salt; beat until blended. Stir in green onions.
Melt butter in large nonstick skillet. Add egg mixture; cook over medium-low heat, without stirring, until egg mixture begins to set on bottom. Draw a rubber spatula across bottom of skill to form large curds.
Add shredded cheese and bacon. Continue cooking until cheese melts and eggs are firm but still moist (do not stir constantly). Serve immediately.
Notes
You can use different cheeses -Monterey Jack with jalapeno peppers, Colby Jack or sharp cheddar are good. Our personal favorite is Monterey Jack with jalapeno peppers.
