Pineapple Rice and Chicken

what you need
- 4 cups cooked rice (preferably jasmine)
- 4 skinless, boneless chicken breasts
- 1 large can pineapple tidbits, with juice
- Pineapple juice for thinning
- Cornstarch
- 1 granny smith apple, diced (optional)
- Button mushrooms, diced, to taste (optional)
- 1 green, diced (optional)
- 1 onion, diced, to taste (optional)

Cook rice as directed on package. Cook chicken -- you can either grill your chicken or pan cook.
Pour in a large pan the pineapple; juice and all. In can mix 1/2 can juice with about three spoons of cornstarch and add to pan -- this will thicken when it boils. Now is when you would add the options, let it heat up. If it gets too thick, thin it down with pineapple juice.
When ready, put scoop of rice on plate. Pour pineapple sauce over rice and chicken if desired, and enjoy.
Notes
My kids like this without the options; however we do have it both ways. You can add some warm French bread for a side dish.
