what you need
- 2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup granulated sugar
- 1 stick margarine (or butter)
- 2 RIPE bananas
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup milk
make it
Preheat oven to 350 degrees F. With a wooden spoon, mix flour, salt and baking soda in medium sized mixing bowl. Set aside. Cream sugar and margarine (or butter) together in a large mixing bowl. Add bananas, eggs, vanilla and milk. Beat with electric mixer until slightly lumpy. Add flour mixture slowly, using the wooden spoon.
Pour mixture into small loaf pans that have been sprayed lightly with a non-stick spray. Place loaf pans on a cookie sheet inside oven.
Bake 1 hour. Check for doneness by inserting toothpick. Remove from oven. Immediately remove bread from loaf pans. Cool. Wrap in plastic wrap or aluminum foil. ENJOY!!!!
