what you need
- 1 lb. hot pork sausage
- 1 lb. fresh mushrooms, cleaned and thickly sliced
- 1.5 to 2 cups uncooked pasta (use any shapes or a mix, it's a great time to use up small amounts on the self)
- 1 large jar tomato & basil pasta sauce
- 1 pkg. pepperoni
- 4 cups mozzarella cheese
make it
Brown sausage in a large skillet. Remove sausage from skillet with a slotted spoon and reserve. Next, saute the prepared mushrooms in the sausage oils left in skillet, saute until just tender.
In the meantime boil your pasta, draining just before completely soft so that it is not too soft when baked in the sauce. While the pasta finishes, combine the sausage, mushrooms and pasta sauce in the skillet and allow to simmer on low.
In a 2 quart casserole dish, coated with a non-stick spray, layer the ingredients. Start with a thin layer of sauce. Continue in the following order: 1/2 pasta, 1/2 sauce, 1/2 pepperoni, 1/2 cheese. Repeat. Cover with foil.
Bake at 350°F for 30 min. Uncover and bake until all cheese is melted and sauce is bubbling. Remove and let stand for 7 to 10 min. Slice and serve.
Notes
I find it is a very easy dish to prepare at the end of a long workday. I usually serve it with salad and garlic bread. This dish is a favorite in my house. I hope you enjoy serving it to your family too.
P.S. This is not a spicy dish; the hot sausage only gives great seasoning.
