Buffalo Meatloaf (Low Fat)

what you need
- 1 lb. ground buffalo (bison) meat
- 1 pouch Kraft STOVE TOP Stuffing Mix for Chicken
- 1 can (10 oz.) fat free beef broth
- 1 can (14 oz.) whole tomatoes with spices, chopped
- 1 cup tomato juice
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1 egg
- 2 cups Kraft Shredded Partly Skimmed Mozzarella Cheese (set aside)

Preheat oven to 325 degrees F. In large bowl mix all the ingredients, except for the mozzarella cheese, till just mixed.
Place meatloaf mixture in a 5 1/2 x 9 1/2 loaf pan or a 9 x 9 square pan.
Place in oven uncovered and cook for 45 to 55 minutes depending on your oven. Remove from oven in the last 5 minutes. Spread the cheese on top of the meatloaf; add more cheese if you like. Return to oven till cheese melts. Remove and serve with your favorite vegetables and potatoes or rice.
Notes
Cooking time is very important as buffalo meat is very lean and cooks fast "DO NOT OVER COOK". Use a timer if need be.
