what you need
- 1 stick butter or margarine
- 1 1/4 cups brown sugar
- 2 fresh peaches, sliced (canned can be substituted)
- 1 1/2 cups fresh blueberries, divided
- 1 box yellow cake mix
- 1 cup peach nectar (orange juice can be substituted)
- 3 eggs
- 1/3 cup oil
- 1 Tbsp. flour
make it
Melt butter in a 12 inch cast iron skillet if you have one otherwise use a 13 x 9 cake pan. Mix brown sugar into melted butter. Place peach slices on butter sugar mixture add 1/2 cup blueberries.
Mix cake according to directions substituting peach nectar for water. Take remaining blueberries and dust with flour. This helps stabilize them in batter. Fold dusted berries into cake mix and pour on top of fruit.
Bake in a 350°F oven for 35 to 40 minutes. Let rest for 5 minutes and turn out onto a foil covered pizza pan for skillet, or a platter for a rectangular cake pan. Serve warm.
Notes
Don't worry if the cake appears to be very dark, it's just the juice from the berries. It makes a refreshing change from pineapple upside-down cake.
