Upside-Down Strawberry Shortcake

what you need
- 1 white cake mix
- 1 box (8 oz.) Jell-O Strawberry Flavor Gelatin
- 1 small container frozen strawberries in syrup
- 1 bag Jet-Puffed Marshmallows
- 1 tub Cool Whip (optional)

Spray 9x13 pan with cooking spray. Preheat oven to 325 degrees F. Prepare cake mix as directed on box. Mix Jell-O as directed with HOT water only (omit the cold water step)....then add in the frozen strawberries.
Cover the bottom of the baking pan with the bag of marshmallows, then pour cake mixture over the marshmallows, then pour the Jell-O/strawberry mixture over cake mix.
Bake 35-40 minutes, can check with toothpick for doneness. After removing from oven, let cool on countertop for 20-30 minutes, then refrigerate until cooled completely. Invert cake onto serving platter.
Notes
As this cake bakes, the marshmallows will rise to the top, and the Jell-O/strawberries will sink to the bottom of the pan. When inverted, it is a very pretty cake.
It is one of those cakes that you have to watch while baking--checking for doneness can be tricky!!
It is a very delicious cake any time of year--very pretty for July 4th, but also nice on a Christmas table!!
