what you need
- Crust:
- 1 package graham crackers, crumbled OR 1 cup prepared graham cracker crumbs
- 1/4 cup butter, melted
- Cheesecake:
- 12 ounces Philadelphia Brand Cream Cheese, softened
- 3/4 cup sugar
- 3 eggs
- 1/2 teaspoon vanilla
- Sour Cream Topping:
- 1/2 pint Breakstone Sour Cream
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- Strawberry Topping:
- 1 1/2 tablespoons cornstarch
- 1 1/2 tablespoons Jell-O Brand Strawberry Flavor Gelatin
- 1/2 cup hot water
- 1/2 cup sugar
- 3-4 drops red food coloring
- 1 pint fresh strawberries, sliced

Crust: Mix graham cracker crumbs with melted butter, shape into a 10-inch pie plate (bottom and sides) to form crust.
Cheesecake: Combine softened Philadelphia Brand Cream Cheese with sugar and beat until smooth. Add eggs one at a time, beating well after each addition. Add vanilla and mix. Pour into unbaked graham cracker crust and bake 30 minutes at 350 degrees F; cool for 10 minutes.
Sour Cream Topping: Mix Breakstone Sour Cream, sugar and vanilla and pour on top of cheesecake. Bake 15 minutes more at 350 degrees F; allow to cool.
Strawberry Topping: Mix cornstarch, Jell-O gelatin, hot water, sugar and food coloring. Cook over medium heat until thickened. Cool. Add sliced strawberries to cooled mixture and spread over cheesecake. Chill until ready to serve.
Notes
Not your typical cheesecake. This is a wonderful dessert - even for those who don't especially care for cheesecake. I served this for the first time at my oldest son's senior prom dinner and it has been a hit ever since. He requests this dessert for every special occasion!
NOTE - I do not advise using a crust that has been purchased already prepared. The 10-inch sized pie plate is very important as this recipe makes a full dish.
