Grilled Potatoes with Bacon & Onion

- 8 or more slices Oscar Mayer Bacon
- 4 white potatoes, cleaned & sliced
- 1 Vidalia or white onion, sliced into rings
- 4 Tbsp. butter or margarine
- Dash of salt & pepper
- Dash of paprika
- Sprinkle of fresh or dried parsley
- Heavy duty foil

Preheat oven to 400 degrees F or fire up the grill. Fry bacon on medium heat until slightly crisp.
Rip off 4 1ft. square pieces of foil. Layer the slices from one potato, a fourth of the onion, and at least 2 slices of bacon on top of each piece of foil. On top of the potatoes, onion, and bacon, place a tablespoon of butter. Then sprinkle with salt, pepper, paprika, and parsley.
Wrap foil tightly around the vegetables and put into oven for 1 hr. or on the grill until the potatoes can be easily pierced with a fork (about 40 min).
Notes
This recipe comes from my mother. She would make it during the summer for a special dinner like T-bone steaks. It's simple to prepare and goes wonderfully as a side dish or as a complete meal.
