White Chili with Chicken!

what you need
- 2 whole boneless skinless chicken breasts, cut into bite sized pieces
- 2 Tbsp. olive oil
- 1 medium onion, minced
- 3 garlic cloves, minced
- 1-½ cups chicken broth
- 1 lb. tomatillos, husks and stems removed, finely chopped
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. ground dried oregano
- 1 can (4 oz.) green chili peppers, diced
- 1 jar (42 oz.) great northern beans
- 8 oz. Monterey jack cheese, shredded

In a frying pan, place the olive oil and chicken pieces. Sauté until cooked; place chicken in a large saucepan; set aside.
In the same frying pan, now place the onion and garlic. Sauté until tender (approx. 2 min.). Place in the saucepan with the chicken.
Add the broth, tomatillos, and dry seasonings. Bring to a boil then simmer for 20 minutes.
Add the chili peppers and beans – heat through.
Place shredded cheese on each individual serving.
Notes
Like any chili recipe, the longer you let it simmer with all ingredients, the better it gets!
