what you need
- 1 lb. lean ground beef
- 2 Tbsp. dried chopped onions or fresh chopped onion if you prefer
- 1 can enchilada sauce
- 1 can tomato soup
- 1 Tbsp. Worcestershire
- Velveeta cheese
- Flour tortillas
make it
Preheat oven to 350 degrees F. Brown ground beef and onion.
Add enchilada sauce, tomato soup and Worcestershire. Let simmer 10 minutes.
Spray a 9 1/2 x 11 baking pan with nonstick spray. Cut Velveeta Cheese into small slices. Place slice of Velveeta and a spoonful of sauce in flour tortilla, then roll closed and place in baking pan. Continue until pan is full. Top with remaining cheese slices and remaining sauce.
Bake in 350 degrees F oven for about 5 minutes or until cheese is melted.
Notes
I often double this recipe. Many also like to have sour cream on their serving. I find that this is a quick and hearty meal.
If you find your sauce is to thin....you can take a tablespoon of flour mixed with a little warm water in the tomato soup can and then poured in, the sauce mixture will thicken it.
