what you need
- 3 sticks butter, unsalted
- 1 1/2 cups granulated sugar
- 1 1/2 cups brown sugar, light
- 3 large eggs
- 1 Tbsp. vanilla
- 3 cups plain / all-purpose flour
- 1 Tbsp. baking powder
- 1 Tbsp. baking soda
- 1 tsp. salt
- 1 Tbsp. cinnamon
- 3 cups milk chocolate chips
- 3 cups quick cooking oats
- 2 cups coconut
- 2 cups well chopped pecans
make it
Cream butter, granulated sugar and brown sugar. Add the eggs and vanilla and beat until creamy. Add the dry ingredients, one at a time, and blend very well. The dough will be very stiff so you may need to use your hands on the final ingredients. HINT: Add the chocolate chips and pecans last.
Roll the dough out into 1 1/2 in. balls and place on cookie sheet. Do not press flat.
Bake in a 350 degrees F (preheated) oven for 10 to 12 minutes. Cool for 2 minutes and transfer to wire rack for continued cooling. Store in an airtight container once the cookies are completely cooled.

This recipe is a great holiday tradition for my husband and I. Over the past few years we have enjoyed so many compliments that we have started making the recipe and giving the cookies as gifts. Now, when we visit family and friends for the holidays, they always ask, "Where are the cowboy cookies?" **This dough is also great to store in the refrigerator and bake a couple of dozen at a time.
