Chocolate Cookies with Mint Chocolate Coating

what you need
- 1 box chocolate cake mix
- 2 eggs
- 2 Tbsp. water
- 2 Tbsp. oil
- 1/2 cup cocoa
- 1 bag of chocolate chips
- 1/4 tsp. mint extract
- 1 Tbsp. vegetable shortening
make it
Mix first 5 ingredients and shape into balls on wax paper lined cookie sheet. Flatten with bottom of a glass. Bake about 8 minutes at 400 and then let cool.
Meantime, mix the coating:
Pour bag of chocolate chips in microwave safe bowl and melt in microwave about 2 minutes. Stir till smooth. Add extract and vegetable shortening. (Shortening gives a nice sheen, but can be left out.)
Notes
A delicious chocolate cookie with a hint of mint in the chocolate coating. If you don't care for mint, leave it out of the coating and add an extract you like.
