what you need
- 1 1/2 lb. ground beef
- 1 medium onion, chopped
- 1 package taco seasoning (I use mild)
- 1 can pitted black olives, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 3 or 4 flour tortillas (carb watchers can use whole wheat)
make it
Brown ground beef with onion. Add taco seasoning and amount of water taco seasoning calls for to ground beef. Set aside 6 to 8 slices of olives for garnish. Add remaining sliced black olives to ground beef mixture. Mix in separate bowl the two cheeses and set aside.
Place a tortilla on bottom of 2 1/2 Qt. casserole dish (round or square). Top with 1/3 of ground beef mixture. Top with 1/3 of cheese mixture. Repeat layers like you would Italian lasagna finishing with cheese. Top with set aside slices of olives.
Bake at 350 degrees F oven for 30 minutes or until cheese is melted.
Notes
My family always enjoys this dish. My daughter (now 18) when she was 3 would watch me make it and steal olives and cheese whenever she got a chance. We joke about it to this day.
