Sweet and Sour Chicken Breast

what you need
- Sauce:
- 3/4 cup sugar
- 4 Tbsp. ketchup
- 1/2 cup vinegar
- 1 Tbsp. soy sauce
- 1 tsp. garlic powder
- 4 boneless chicken breasts
- 1 egg, beaten
- Corntarch (as needed)
- Vegetable Oil (as needed to fry)

Stir together sugar, ketchup, vinegar, soy sauce & garlic powder until well blended and than set aside.
Dip each chicken breast into the egg and then roll each breast into the cornstarch (I put enough cornstarch on a small plate to cover both sides of one breast, you'll have to add as you go).
Fry each breast until just browned (because of the egg it looks more yellow than brown). Place chicken in a shallow baking dish. Pour your sauce over the chicken.
Bake uncovered at 325°F for one hour being sure to turn the chicken every 15 minutes. Serve with rice or potatoes.
Notes
I also cut the breast into strips and have sweet and sour chicken strips. Your prep. time is longer as you have to roll each slice of chicken in the egg and cornstarch, however it cuts the cooking time by a 1/2 hour.
