- 1 lb. ground beef, browned and drained
- 7 flour tortillas (corn will work)
- 2 small cans enchilada sauce, divided
- 2 cups cheddar cheese, divided
- Sour cream (optional)

Spray a glass baking dish with nonstick cooking spray and preheat oven to 330°F. Divide the beef evenly between the tortillas. Next take 1 1/2 cans of the sauce and mix it with 1 cup of cheese. Evenly divide on top of tortillas.
Fold up the tortillas and put them in the dish. Cover with remaining sauce, cheese and any unused beef. Cover with foil.
Put into the oven for 10-15 minutes. Take out, let cool, and then top with a dollop of sour cream.
Notes
This recipe is easy to adjust to any number of servings and you can pick the level of hotness with the sauce. The foil helps keep the tortillas from drying out.
