what you need
- 2 tsp. olive oil
- 1 sm. onion, chopped
- 1 carrot, chopped
- 1 celery stalk, sliced
- 3/4 lb. skinless boneless chicken breasts, w/o any visible fat; cut into strips
- 1 can (14.5 oz.) crushed tomatoes
- 1 Tbsp. chopped fresh basil or 1 tsp. dried
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper

Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, carrot, and celery; cook, stirring occasionally, until softened, about 10 minutes.
Add the chicken and cook, stirring occasionally, until opaque, about 5 minutes. Stir in the tomatoes, basil, salt, and pepper. Reduce heat and simmer, stirring occasionally, until the flavors are blended and the chicken is cook through, about 10 minutes.
Notes
Serve with whole-wheat penne (2/3 cup cooked penne for each serving) and Kraft 100% Parmesan lightly sprinkled on top.
