what you need
- All purpose flour or cornstarch for coating
- Italian seasoned bread crumbs
- 1 Tbsp. corse salt (I use Kosher) *
- 3 Tbsp. coarse ground pepper
- 4 Tbsp. garlic powder
- 6 Tbsp. Italian seasoning
- 6 pork cutlets (about 1/3-1/8 inch thick) *
- 1 egg
- Extra virgin olive oil
- * can be found at Walmart

Preheat a skillet on medium-low while you prepare the seasoning blend.
Put flour or cornstarch in a dish for coating. Add your seasoning to the bread crumbs in a seperate dish, add some flour to the bread crumbs as well. Beat egg well with 2 tsp. of water in seperate dish.
Dip 1 cutlet at a time into flour or cornstarch, then dip in egg, then dip again in breadcrumb mixture that has been seasoned.
Circle pre-heated skillet 3-4 times slowly with the olive oil.
Place cutlets in oil to brown (about 2 minutes) turn cutlets, and brown on the other side.
Notes
I serve with wild rice and a veggie of your choice.
