what you need
- 2 lbs. lean hamburger
- 3 eggs
- 1/2 bag spinach (rinse, pat dry, chop coarse, removing stems)
- 1 1/2 cups oats (uncooked)
- 1/4 cup Worcestershire sauce
- 1/4 cup Kraft Mayo, (adds moistness)
- salt and pepper, as desired
make it
In a bowl, mix with your wooden spoon the hamburger and eggs, toss in and mix the spinach.
Now get down and dirty. Mix in oats with clean washed hands, adding your Worcestershire sauce, mayo and salt & pepper.
Plop meatloaf into a glass baking pan, 13x9", and form into a rectangle, the length of pan, and about 4" across, the height of your pan, (perfect sized leftover sandwiches with your Kraft Mayo, for lunch idea the next day).
Now bake in your oven at 325 degrees for 1 hour, covered with foil. Last 20 minutes, up the oven to 350 degrees and uncover. Remove from oven and let cool for slicing about 8 to 10 minutes, serve!
Notes
Great meatloaf! Made it up one day to use up the bag of spinach the kids refused to eat...been a regular meatloaf ever since.
The kids love it.... and ask for me to cook it! Go figure! Must be the green spinach sticking out of the meatloaf...makes it an interesting food to try!
Suggestion: serve with applesauce and leftover Cheezy Rotelle! (you can find this companion pasta dish also in the Recipe Connection!
