what you need
- 1 cup dry 15 bean mixture or favorite beans
- 1 Tbsp. olive oil
- 1 medium onion
- 2 cloves garlic
- 3 cans (14 oz. each) chicken broth
- 1 can (26 oz.) diced tomatoes, un-drained
- 1 small - medium zucchini, chopped
- 2 carrots, diced
- 1 cup frozen kale, Swiss chard or spinach
- 1/4 tsp. Italian seasoning
- Salt and pepper to taste
- 1 cup medium shell pasta or favorite pasta
- Grated parmesan cheese, optional

Rinse dry beans to clean away any grit that may be present. Then combine all ingredients EXCEPT PASTA into a 5-6 quart slow cooker or crock-pot and cover.
Set heat on Low for 8-9 hours or HIGH 7-8 hours stirring as needed. 45 minutes - 1 hour prior to finishing, add pasta and stir to mix well. Cover and continue to cook until beans and pasta are soft.
Serve in bowls and top with cheese if desired.
Notes
A 15 bean mixture can be found with the dry beans in your favorite supermarket. Any pasta will do, but shells work well.
