what you need
- 1 jar (12 oz.) fat free beef gravy, divided
- 2 lbs. ground turkey
- 1 cup hot water
- 1 pkg. (6.25 oz.) Low Sodium Kraft Stove Top Stuffing Mix
- 2 eggs, lightly beaten
- 4 large potatoes

Preheat oven to 350. Pour 1/4 cup gravy into a large bowl. Add the meat, water, stuffing mix and eggs, mix well. Shape mixture into a loaf and place in a large baking pan.
Dice potatoes and place around the meatloaf. Pour 2/3 of the remaining gravy over the top of the meatloaf. Add some warm water (1/4-1/2 cup) to the remaining gravy in the jar, replace the lid and shake well. Pour mixture over the potatoes.
Cover loosely with foil and bake for 1 hour. Remove foil, stir potatoes, replace and bake for another 45-60 minutes, or until potatoes are done amd meatloaf is browned.
Notes
If desired, onions and carrots could be added to the diced potatoes.
