what you need
- 1.25 lb. lean ground chuck (I actually use fresh ground turkey but my grandmother used beef)
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 cans (15 oz. each) peas & carrots, drained
- 2 cans (15 oz. each) diced potatoes, drained
- 1 can (15 oz.) regular stewed tomatoes
- 1 can (10 oz.) tomato soup
- 4 oz. tomato sauce (optional - use if you feel it needs additional moisture)
- Salt & pepper to taste
make it
Brown meat with onion & garlic, drain well, may rinse if wish. Spray cooking spray on 3qt casserole dish.
Mix meat & rest of the ingredients right in casserole dish, adding tomato sauce if you wish.
Bake 45 minutes in 350 degree F oven.
Notes
May make ahead and store in refrigerator, then bake for 1 hour or until heated thoroughly.
May omit carrots & peas and substitute with other canned veggie if you kids hate one or the other.
May add cheese or crushed crackers last 15 minutes of baking for a crusty top.
