what you need
- Flour
- 1 cut up chicken or legs, thighs and wings
- 2 tablespoon of olive oil
- 1 onion, sliced in rings
- 2 cloves chopped garlic
- 1 cup white wine
- 1 cup chicken broth
- 1 can diced tomatoes
- 1 lemon (juice and peel)
- 1/2 cup fresh parsley
- Salt & pepper to taste
make it
Flour chicken parts and dust off excess flour. Brown chicken and then remove chicken. Add sliced onions, and garlic, and saute until soft.
Add chicken, wine, chicken broth, tomatoes, 2 tablespoons of lemon juice. simmer until chicken is done about 30 minutes.
Mix together lemon peel and parsley and set aside. Salt and pepper to taste. Sprinkle mix over chicken and simmer 5 minutes. Serve over white rice.
Notes
This is good the first day, but even better after it has set a while.
