Grandma's Homemade King Ranch Chicken

what you need
- 1 fryer (whole chicken) (or 2 1/2 lb. of boneless skinless chicken breast)
- 1 can (16 oz.) Campbell's Cream of Chicken Soup
- 1 can (16 oz.) Campbell's Cream of Mushroom Soup
- 1 cup chicken broth
- 1 can (16 oz.) Ro*Tel Hot Tomatoes
- 1 tsp. chili powder
- 1 medium size box Velveeta Cheese
- 1 bell pepper
- 1 onion
- 1 stick Land 'O Lakes oleo or butter
- 1 bag flour or corn tortillas

Boil the chicken in a large pot until completely cooked. Let it cool and take the meat off the bone.
While the chicken is cooling heat the soups, broth, Ro*Tel tomatoes, chili powder and Velveeta Cheese in a medium pan.
Saute the bell pepper and onion in a pan using the stick of butter. When finished add to the pan you have heating the soups, tomatoes, and cheese. Then stir in the chicken.
Using a casserole dish start with one layer of shredded or broken up tortillas. Then pour half of your chicken mix on top of the tortillas. Make another layer of tortillas and then pour the rest of your chicken mix on top. Finish up with a last layer of tortillas.
Bake at 300 degrees F for approx. 30-35 minutes.
Notes
Some people don't like spicy food so if you like you can substitute the Ro*Tel Hot Tomatoes for the Ro*Tel Medium or Mild Tomatoes.
You can also add a layer of shredded cheese on top of your last layer of tortillas if you like a lot of cheese. (This usually tastes better if you use the Ro*Tel Hot Tomatoes, not mild or medium.)
