Peach Cobbler with Ice Cream

what you need
- Filling
- 5 cups sliced peeled peaches (may use canned peaches) about 3 lb.
- 1/2 cup sugar
- 2 Tbsp. flour
- 1 Tbsp. lemon juice
- 1/2 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 2 Tbsp. butter or margarine
- Batter:
- 1/2 cup unsifted all purpose flour
- 1/2 cup sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp. butter or margarine, softened
- 1 egg, slightly beaten
- Light cream or vanilla ice cream

1. Make Filling: In medium bowl, combine peaches, 1/2 cup sugar, 2 Tbsp. flour, lemon juice, vanilla and almond extracts, cinnamon, 1/4 tsp. salt, and 1/4 cup water. Turn into 8-by-8-by-2-inch baking dish. Dot with 2 Tbsp. butter.
2. Preheat oven to 375 degrees.
3. Make Batter: In medium bowl, combine all batter ingredients; beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. (Batter will spread during baking.)
4. Bake 35 to 40 minutes, or until peaches are tender and crust is golden. Serve warm, with cream or vanilla ice cream.
*Or use 2 cans (1 lb. 14 oz. size) sliced peaches, drained, reserving 1/4 cup syrup to use instead of water in Step 1.
