what you need
- 16 oz. can crushed pineapple with juice
- 1 cup sugar
- 2 Tbsp. flour
- 2 eggs, beaten
- 7-8 Tbsp. apple cider vinegar
- 8-16 granny smith apples
- 16 oz. Kraft Cool Whip
- 2 cups salted dry roasted peanuts, chopped, divided
make it
Mix the first 5 ingredients together in a medium saucepan. Stir over medium heat until thick. Refrigerate until cooled.
Peel and chop apples. Stir the apples, Kraft Cool Whip and 1 and 1/2 cups of the chopped peanuts into the the cooled mixture.
Sprinkle top with remaining chopped peanuts.
Notes
This salad tastes even better when made the night before and then served.
I usually double this recipe and still there is never enough. Everyone always wants to take some home with them.
This stuff is very addicting..... lol
