Grandma's Colcannon (Irish Potatoes & Cabbage)

what you need
- 6 russet potatoes cut in quarters
- 1 small green cabbage, cut in wedges
- 4 tbsp. butter
- 1 large onion, chopped
- Salt, pepper, nutmeg, to your taste
- 6 oz heavy cream
make it
1. Cook potatoes and cabbage in lightly salted water
2. Remove cabbage from water when cooked.
3. Remove core from cabbage and discard.
4. Chop cabbage.
5. Melt butter in large skillet and saute the cabbage & onions until onions are translucent.
6. Add salt, pepper, nutmeg, and cream; bring to a boil, and remove from heat.
7. Drain the potatoes and mash.
8. Blend in hot cabbage mixture; place in Larde serving bowl.
Notes
When Grand Da would help Grandma in the kitchen, he would use a Ginnises Bottle instead of a masher. This would give us "Smashed Potatoes" with no lumps.
