what you need
- Spanish rice mix (kind that requires tomatoes)
- 2 Tbsp. unsalted butter
- 1 regular-sized can sweet onion or chilies verdes (if you like it hot) diced tomatoes
- 1 can vegetarian refried beans
- 2 Tbsp. burrito seasoning mix
- 1/2 cup tomato juice or water
- 1 regular-sized can No-Salt or regular Yellow Whole kernel corn
- Kraft Shredded Mexican Style Cheese as garnish
- Fresh sour cream
- 6-8 sun-dried tomato wraps
- Optional: diced fresh vegetables (such as lettuce, tomatoes or green peppers) and/or olives as your prefer

Prepare the Spanish rice mix according to box directions, using unsalted butter if you prefer to lessen the salt in this recipe. Add can of tomatoes to mix according to directions.
While this is cooking, put the refried beans in a 1-1/2 quart pan on low. Add burrito seasoning mix and tomato juice. Simmer uncovered. Stir slowly every few minutes.
While this is warming, heat corn on stovetop or in microwave. While these dishes are cooking, prepare other ingredients for burrito assembly.
Layer refried beans, Spanish rice, corn, shredded cheese and sour cream on wrap. Sprinkle on optional ingredients. Roll up & serve immediately.
