Italian Chicken Quesadillas

what you need
- 2 chicken breasts
- 1 bottle Italian dressing
- 1 green pepper
- 1 onion
- 1 package 10 soft taco shells
- 2 Tbsp. oil
- 1 cup shredded Monterey jack cheese
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1 cup sour cream
make it
Chunk chicken. Marinate overnight in Italian dressing.
Fry chicken, peppers, onions in skillet, approx. 15 - 20 minutes.
Brush 1 side of each taco shell with oil. Layer chicken mixture and cheeses on 1 taco shell (oil side out). Top with another taco shell (oil side out).
Bake at 350 for approx. 15 - 20 minutes. Cut with pizza cutter into 4 slices. Mix salsa and sour cream as dipping sauce.
Notes
You can also layer and microwave each quesadilla for a faster meal.
