what you need
- 4 zucchini or yellow squash (I like the squash better)
- 3 carrots
- 1 onion
- 1 can cream of chicken soup
- 2 boxes Stove Top Stuffing Chicken Flavor (follow instructions on box)
- 16 oz. sour cream
- 1 stick of butter, melted
make it
Slice the vegetables and steam in as little water as possible, reserve water. When the vegetables are halfway done, place them in a mixing bowl. Add the rest of the ingredients (except the stuffing).
Follow the directions on the stuffing box adding the proper amount of water. Mix all together. Place the mixture in a casserole dish, cover.
Bake at 350 degrees F for 45 minutes. Uncover and let it brown for 15. It's ready to eat! Enjoy!
Notes
My family has me make this for all our holiday get-togethers. It's colorful and best of all, my kids love it and they're getting their veggies!
You can also place all ingredients in a crock-pot/slow cooker in the morning and it will be ready when you are ready for dinner. Cook on low all day, no need to stir. This is the way I cook it most because I can bring it to my family's house and plug it in, leave it on warm until dinner is ready.
