what you need
- CRUST
- 4 Tablespoons (1/2 stick) butter, room temperature
- 1 egg
- 1/4 tsp. salt
- 1 cup flour
- 4 Tablespoon sugar
- 1/2 tsp. baking powder
- FILLING
- 1 pkg. (8 oz.) Philadelphia Cream Cheese, room temperature
- 3/4 cup sugar
- 1 Tablespoon flour
- 1/2 tsp. salt
- 2 eggs
- 2 cups milk
- 1 tsp. vanilla
- 1/4 cup lemon juice
- Cinnamon (topping)

Mix all "crust" ingredients with a fork until crumbly and press into bottom and sides of springform pan.
With an electric mixer mix cream cheese, sugar, flour, salt and eggs until smooth. Then add milk, vanilla and lemon juice gradually to cream cheese mixture until smooth. Pour into crust lined pan (filling will be very runny - this is how it should be). Then sprinkle with cinnamon.
Bake at 350 degrees F for 1 hour.

This is a very easy but absolutely delicious variation of the usual "heavy" cheesecake-- it has a very light and creamy custard texture that melts in your mouth!
My 89 year old Uncle Hen asks me to bake it for him every time we get together -----even the kids love it too! Try it!!
