what you need
- Instant pancake mix (Just Add Water)
- 2% milk
- 2 Tbsp. Philadelphia Cream Cheese
- 2 Tbsp. confectioners' sugar
- 1 Tbsp. strawberry preserves
make it
Mix together the pancake mix and milk in a medium bowl until thick and creamy. Pour mixture half way into individual microwave-safe bowls.
Microwave on high for 1 minute each. While that bakes, fork together cream cheese and confectioners' sugar into a thick icing.
When cakes are ready and still warm, spread on icing mixture, then the strawberry preserves. Serve immediately.
Notes
Also, this can be prepared in muffin tins. Bake at 350 until cakes puff. Finish recipe as direced.
