what you need
- 1 cup rice
- 2 1/3 cups chicken broth
- 4 boneless chicken breasts, cut into 1 inch pieces
- 2 Tbsp. minced onion
- 2 cups mushrooms
- 4 tablespoons olive oil
- 1/3 cup seasoned bread crumbs
- 1/4 cup Kraft Parmesan Cheese
- Salt and pepper to taste
make it
Prepare rice as normal but substitute the water with chicken broth. Start it a little before the chicken so that it is done on time.
Clean and cut chicken. Then mince the onion and slice the mushrooms. Heat oil in a large frying pan on med/high heat and add the mushroom, chicken and onion.
Saute until chicken is cooked through and onions and mushrooms are cooked. Add the bread crumbs and saute for 3-5 minutes.
When the rice is done cooking, spoon some onto a plate and place the chicken and mushrooms over it. Sprinkle the parmesan cheese over the top. Serve and bon appetite!!!
