make it
Brown sausage and ground beef, seasoned with salt, pepper, and garlic powder, drain grease. While meat is browning, separate cabbage leaves and put in boiling water long enough to soften leaves.
Melt butter in large pan, stir in onions, peppers, and mushrooms. Simmer 5 to 8 minutes, add sausage, beef, diced tomatoes, and 1 can of tomato sauce, and mix well. Remove mixture from heat, stir in the 2 cups of cooked rice and 3 cups of the cheese.
Spray casserole dish with cooking spray. Place portion of mixture in softened cabbage leaves and roll up and place seam side down in dish. Repeat. Pour the remaining can of tomato sauce over the rolls of cabbage and top with the remaining 2 cups of cheese.
Cover and bake at 350 degrees F for 45 minutes.
Notes
These cabbage rolls freeze well. Omit the last step of tomato sauce and cheese till ready to cook in oven.
