what you need
- 2 cans (8 oz. each) tomato juice or sauce
- 1/2 cup well packed brown sugar
- 1/2 tsp. onion salt
- 1/8 cup vinegar
- 5 gingersnaps, well crushed
- ---
- 1 lb. ground beef
- 1 egg
- 3/4 cup bread crumbs
- Pinch of salt (optional)

Preheat oven to 375. In sauce pan, mix together tomato sauce, brown sugar, onion salt, and vinegar. Crush gingersnaps and stir into sauce. Simmer on low heat until gingersnaps are completely dissolved.
While sauce is simmering, mix ground beef, egg, and bread crumbs. Using a tablespoon of meat at a time, roll meat mixture into balls and place in baking dish, with sides touching.
After all meat has been used, pour sauce over meatballs, evenly coating all of them. Place in oven for 25 minutes.
After the 25 minutes has elapsed, remove and recoat the balls with the sauce, rolling them around to ensure even cooking. Place them back in the oven for an additional 15 mintues. Enjoy!
Notes
The gingersnaps add a just the right touch of sweetness to the sauce!
These meatballs go great with cheddar mashed potatoes. The sauce can even be used for meatloaf or on the grill.
