Savory Slow Cooker Pork Chops (for small cookers)

what you need
- 5 red new potatoes
- 1/4 teaspoon thyme
- 4 lean pork chops
- 1/4 teaspoon parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 envelope onion-mushroom soup mix
- 1 cup of chicken, beef, or vegetable stock
make it
Cut new potatoes into quarters and layer in the bottom of slow cooker crock. Sprinkle thyme over potatoes, and top potatoes with pork chops. Sprinkle parsley, salt and pepper over chops.
Mix soup mix with broth in a separate bowl. Pour over pork chops.
Cook on low for 6-8 hours.
Notes
This makes WONDERFUL gravy, especially when thickened with a few tablespoons of flour mixed with 1/4 cup of water, salt and pepper and simmered on the stovetop.
Also, the pork chops may be browned in a skillet before being added to the pot to ensure they will be juicy and tender.
