- 6 large sweet potatoes
- 3 Tablespoons frozen orange juice
- 2 Tablespoon of water
- 2 Tablespoon of honey
- 1 Tablespoon melted butter or margarine
- 1/4 cup of sugar
- 22 Jet-Puffed Marshmallows, halved
make it
Boil the sweet potatoes with peelings on (this leaves nutrition to them) 25 minutes. Cool to touch, peel potatoes, and place in a mixing bowl. Combine orange juice concentrate, water, honey, and butter mix well. Add 1/3 of this orange juice mixture and sugar to potatoes. Beat potatoes mixture at medium until fluffy and smooth.
Spoon potato mixture to a 2 1/2 quart casserole, then brush remaining orange juice mixture over potatoes.
Bake uncovered about 20 minutes at 350°F. After 20 minutes, place the 22 Jet-Puffed Marshmallows (cut marshmallows in halves) over the sweet potato casserole. Bake another 20 minutes or until marshmallows slightly brown or puffed.
Notes
Taking smaller portions for servings, would allow less calories, it's just I don't see how one could find a substitute in this recipe to decrease calories, unless one takes a smaller serving.
If you take away the marshmallows, you take away the good taste of this casserole. It would be the best to enjoy the dish and cut the portion of piece.
