what you need
- 1 package (8 oz.) Philadelphia Fat Free cream cheese, softened
- 2 Tbsp. finely chopped green onions or chives
- 1/2 tsp. garlic powder (adjust to taste)
- 24 medium size capers (these can be crushed if desired)
- 1 large English cucumber (at least 12-inches long)
- 3 Tbsp. chopped fresh dill
make it
Mix cream cheese, chives, garlic powder, and capers; set aside.
Peel English cucumber lengthwise alternating so to leave some green peel. Scoop out center with a melon baller being careful not to go through the other side. Fill centers with cream cheese mixture and top with chopped dill.
The cucumbers can be prepared ahead, but be sure to blot dry before filling. The cream cheese filling makes a better presentation when piped into the cucumbers with a pastry bag.
Notes
To make cucmber slices even, first cut cucumber in half, then half each piece until desired amount of rounds. Variations on the filling: Add one of these!
