- For Pancakes:
- 4 eggs
- 1 1/4 cups milk
- 1/3 cup sugar
- 1/2 tsp. salt
- 3/4 tsp. vanilla extract
- 1/4 tsp. baking powder
- 1/2 tsp. cinnamon
- For the apples:
- 2 Tablespoons sugar
- 2 Tablespoons butter
- 3 apples, peeled, cored and sliced
- For garnish:
- 4 Tablespoon butter
- 2 Tablespoon sugar
- 1/2 tsp. cinnamon
- Confectioners’ sugar

Preheat oven 425 degrees. In a bowl, beat together eggs, milk, sugar, salt, vanilla, baking powder and cinnamon. Pour the batter into a greased 10-inch skillet. Bake for 20 minutes until brown and puffy.
Meanwhile, cook sugar and butter with apples until soft. When the pancake is done, arrange on a serving platter. Garnish with apples.
Melt 4 tablespoons butter with sugar and cinnamon. When soft and slightly caramelized, drizzle over pancake. Sift confectioners' sugar on top and serve.
Notes
Serve with vanilla ice cream for a cool treat.
