what you need
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1/4 cup sugar*
- 4 egg whites
- 1/2 cup applesauce (sweetened)
- 1 tsp. vanilla extract
- 1/2 cup sugar free strawberry preserves
- 1/3 cup soymilk**
- 2 medium bananas, mashed
- Cooking spray

PREHEAT oven to 325 degrees and grease a 9x5x3-inch loaf pan.
MIX flour, salt and baking soda in a medium bowl. Set aside.
BLEND sugar, egg whites, apple sauce, vanilla, and preserves until well blended.
ALTERNATE adding flour mixture and milk, ending with flour. Stir in mashed bananas.
BAKE 1 hour 20 minutes or until inserted toothpick comes out clean. Cool and serve with desired milk.
Notes
*You can choose to use Splenda for an even healthier twist
** Soymilk was my choice. Feel free to use fat free, reduced fat or skim milk.
