what you need
- 3 lb. boneless skinless chicken breast
- 1/2 cup olive oil
- 1/4 cup vinegar
- 1 whole squeezed lemon juice
- 3 Tbsp. salt
- 1 Tbsp. ground cinnamon
- 2 Tbsp. black ground pepper
- 1 Tbsp. ground nutmeg
- 3/4 cup yogurt (original flavor)
- 2 whole onions sliced into wedges
- Some salt
- 1 cup chopped fresh parsley
- 1/4 of (summak) it's a kind of seasoning you can find in Arabic stores
- 3 whole red tomatoes cut into wedges

1. Wash the chicken breasts with warm water, and then let it dry. Cut the chicken breasts into medium slices. Prepare the marinade for the chicken by mixing olive oil, vinegar, lemon juice, 3 Tbsp. of salt, cinnamon, black pepper, nutmeg and the yogurt together and mix well. Add the marinade to the chicken breasts and toss it well. Put the marinated chicken in a bowl and cover it with a plastic wrap and refrigerate overnight (12) hours.
2. When it's ready, take it out from the fridge. Preheat oven to 350 degrees F. Put the chicken into a deep casserole and cover it with aluminum foil. Bake it about 1 hour. After 1 hour check the chicken and baste it with the marinade frequently for another 1/2 an hour.
3. After 1/2 hour, preheat the broiler on high, and put the chicken a little bit away under the broiler uncovered for about 15 minutes. Then toss together the remaining ingredients and pour it over the chicken, turning it once. Bake it 15 minutes more, and then it's ready to serve.
Notes
You can eat this as a second dish but making sandwiches by wrapping it with warm flour tortilla.
