what you need
- 3 lbs. ripe plum tomatoes (I use regular garden tomatoes, peeled)
- 3 lbs. firm zucchini
- 1/2 cup dry bread crumbs, plain
- 1/4 cup fresh grated Kraft Parmesan Cheese
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. chopped fresh thyme
- 1 Tbsp. chopped fresh oregano
- Salt and pepper to taste
- 1/4 cup pure olive oil
make it
Preheat oven to 375 degrees. Slice the tomatoes and zucchini into 1/4" thick round slices as uniformly as you can.
On an ovenproof platter, overlap the tomatoes and zucchini in a decorative pattern, like red and green shingles on a gingerbread house. Blend all the dry ingredients together, and then scatter them evenly over the tomatoes and zucchini.
Sprinkle the olive oil on top and bake until golden and crusty, about 20 minutes. Serve with cake server or metal spatula by sliding several overlapping pieces onto each dinner plate.
Notes
This was a favorite at our Italian meals, now requested at all family meals.
