what you need
- 1 pound tomatoes, seeded, coarsely chopped
- 3 garlic cloves
- 2 jalapeno chilies, coarsely chopped
- 1 small onion, coarsely chopped
- 1 tablespoon canola oil
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped onion
- 2 tablespoons fresh lime juice
make it
Combine first 4 ingredients in processor. Blend until almost smooth.
Heat oil in large saute pan over medium heat. Add salsa to skillet and cook to blend flavors, stirring often, about 8 minutes. Cool salsa completely.
Add cilantro, chopped onion, and lime juice. Season salsa to taste with salt.
