what you need
- 1/4 cup graham flour
- 1/4 cup oat flour
- 1/2 cup A.P. Flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 1/2 T sugar
- 1 egg
- 1/2 of a banana (mashed-about 1/4 cup)
- Approximately 1/3-1/2 cup strawberry juice
make it
Combine all dry ingredients. Add egg and banana, and enough liquid to give it the consistency of pancake batter (it should be thick, but not thick enough to spoon-and runny, but not as runny as crepe batter.) You may need to add more, or not add as much, depending on the humidity and elevation.
Preheat pan to medium heat, and cook em' up. Serve with either maple or strawberry syrup. Cream cheese, instead of butter makes it extra yummy (I especially suggest going all out-a schemer of cream cheese, a bit of strawberry syrup and a dollop of whipped cream) Though butter and maple syrup is just as delicious and compliments the banana.
