what you need
- Crust
- 1 cup ground pecans, walnuts, or almonds
- ¼ cup softened butter
- ¼ cup Splenda (for baking)
- Filling
- 5 packages (8 oz. size) cream cheese
- 1 ¾ Splenda (for baking)
- 3 Tbsp flour
- 1 ½ tsp grated lemon peel (or lemon juice)
- ¼ tsp vanilla extract
- 5 eggs
- 2 egg yolks
- 1/4-cup heavy cream

Crust
Preheat oven to 400F. Prepare an 11 x 14 glass baking dish by coating with baking spray. Blend nuts, butter and Splenda. Press mixture into bottom of dish. Bake 10 minutes. Remove from oven.
Filling
Preheat oven to 500F. In a large bowl, combine cheese, Splenda, flour, lemon, and vanilla. Beat at high speed just to blend.
Beat in eggs and egg yolks one at a time. Add cream, beating until combined. Pour into crust.
Bake 10 minutes. Reduce oven temperature to 250F and bake 1 hour longer. Cool and refrigerate three hours or overnight. Enjoy!
