what you need
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1 pkg. (8 oz.) Kraft Velveeta Cheese
- 12 corn tortillas (can be substituted with flour)
- 1 can Ro*Tel tomatoes
- 1 bag tortilla chips
- 1 bag Kraft Shredded Cheddar Cheese
- 1 jar salsa

Preheat oven to 350 degrees F. Brown and drain ground beef; add taco seasoning and 1/4 cup water. In microwave, melt Velveeta with Ro*Tel until dip is done.
In medium sized baking dish, cover bottom with 6 corn tortillas (more or less depending on size of pan). Then add half of taco meat and spread evenly on top of tortillas. Next add half of Ro*Tel dip to cover meat. I like to add some crushed chips on top of this just to give it some texture but this is optional. Then repeat all steps again topping it off with half a bag a chips and then shredded cheese.
Bake for approx. 15 min, or until cheese is melted and casserole is warm throughout. Serve with remaining chips and salsa.
Notes
I also like to serve this with tomatoes, sour cream, onions and lettuce. Guacamole would be great, too!
