- 2 russet potatoes, medium, cubed
- 2 carrots, large, cubed
- 1 yellow onion, diced
- 2 lbs. stew beef, cut into smaller pieces
- 1 can French onion soup, undiluted
- 1 can cream of mushroom soup, undiluted

In a 3-and-a-half to 6 quart slow cooker, place the potato cubes on the bottom. Next, place the carrot cubes on top of the potato cube. After that, place the diced yellow onion on top of the carrot cubes. Next, place the stew beef on top of the yellow onion pieces.
In a separate bowl, blend the soups together. Carefully pour the mixture on top of all ingredients in the slow cooker until it reaches the potato cubes.
Cover and cook on LOW 8 to 10 hours. Stir with ladle before serving.
Notes
Leftovers can be stored in refrigerator in plastic microwave-safe containers, but do not attempt to freeze anything leftover!!
